why not just add what you want to the existing array with a simple comma at the end or the beginning instead of writing out more code? Same thing with pop and shift.

Yes, generally these methods would be used farther down in your code. There's not much point in creating an array of numbers and then immediately pushing another number onto the end of it.
Likely you would initialize your array with whatever values were appropriate and then some other code would run. Further down, based on those results, you may need to add or remove values using these methods.
The examples in the videos are probably kept simple so you can learn the concepts.
