Are there any free tools available online to build assets for Unity games? I know there's Maya LT, but that's paid. I don't need anything too fancy.

Since Is one of the best examples of Open Source software under GNU GPL. So you can learn it because Youtube is full of free good Blender tutorials for any use. You can do all you need with Blender. And if it helps you , you can make donation. Or code contribution. In it you can import the sketch of the asset, Make a close 3D Model mesh, make the UV mapping, make the ambient occlusion, Paint it or add the textures, Make the bones and the animations. Export it in the correct formats. Is what will pay you more in long range.
Maya LT is only 3yr free and for students & educators use. After that you will need to pay. And is a grate expencive product. Other students & educators examples are Google Sketchup and 3D Max

The best free option to make assets is Blender
Take a look, it's a great free alternative to Maya LT. Also there is a course on Maya coming out soon. No guarantee, but you might be able to follow along in Blender to that course.
