Do all posts get automatically transferred to the "Blog" page when setting a new static homepage?

If we do not create the new "Blog" page, where do all the posts go? And how are they automatically transferred to this new "Blog" page we created?

No, you have to create a Blog page and then assign the Posts page to "Blog" (if that's the name of your new page for the blog section) that you can find in /wp-admin/options-reading.php

Hope this helps!
