Ok, this is all making good sense. But I have 1 question.

So to open up my site, I simply type "localhost" into the web browser and that will open my index.php. But what if im working on 2 projects? It doesn't seem like the browser gives me any options as to what file to open.

localhost refers to the root folder of the server. if you want multiple projects on the same server then put then in different folders then go to localhost/Folder-Of-Project. you can also look in to the built in server php has. it allows you to start a server at a specific port. http://php.net/manual/en/features.commandline.webserver.php
