Something that hasn't been explained at all is why you're putting the <p> tag inside of quotes to start the string.

...I'd really like some clarification with how to input tags and why you're putting the opening <p> inside a set of quotes.

Quotes indicate a literal string in JavaScript, and since JavaScript doesn't recognize HTML code then any HTML needs to be handled as a string to avoid creating syntax errors in the JavaScript code.
