.toFixed() VS. parseInt() ?

Would it be wrong to use guess.toFixed() instead of parseInt(guess) ?

They do different things.

parseInt() will convert a string into a number, and toFixed() converts a number into a string.

Certainly. They do the opposite of each other parseInt() takes a string and turns it into a number. toFixed() takes a number and turns it into a string.
