Where did the port number come from?

In this video you fill in the information for "port number" from memory, but where did this 5 digit number come from, and will it be the same for me?

By default, FTP servers use port 21 and SFTP servers use port 22. However, sometimes the server administrators change the default port setting to another port to prevent unauthorized FTP access.

I think I understand, so does Nick change the port number from 22 to a number of his own choosing for better security?

The port number is chosen by the server admin/hosting company, you don't choose it yourself. They should tell you if it is different from the default.
