Why in his version, did he only have to use the () on the toUpperCase() on the first time only

he only used it on the first one but not the other four toUpperCases.

is that correct Javascript, or did he mess up?

Good catch. Yes, it is an error. The toLowerCase() method does require the parentheses on all instances.
