Why the teacher use multiple h1 in this project?

H1 not for the most important title and appear once in a page only?

It can be added to page as much as you need. As far as text inside h1 is most important.

In this case, will multiple h1 confuse the SEO, i mean the crawler or spider?

It can be included in html multiple times, however, for semantic purposes, it is not a good practice to have more than 1 <h1> per page, as far as I know.
