Gradle is what's called a build tool. It's responsible for taking your source code and turning it into a running app. In order to use the OkHttp library gradle needs to know about it so it can be added to your app. Needing OkHttp is said to be a "dependency", because your app depends on OkHttp to run. Gradle manages these dependencies, as well as compiles and assembles your app.
