And, finally, if I have doubles, I want to reroll the hand.

So I've tried to follow the instructions in the questions asked by others, but no dice (pun intended). Can someone please explain why the code I've used is not working?

In your doubles method, you are not telling the class to run the reroll method, you are simply returning True or False.
