This is a job for concatentation. The operator that does this is "||". So if you wanted to put angles around a field named "email", and then call the whole thing "my_email", you could do this:

SELECT '<' || email || '>' AS my_email FROM ... /* db name and other clauses here */

Sometimes you'll join more than one field and strings all together. For example, putting a name in front of the email (and calling it "name_and_email") might look like this (note the extra space with the first angle):

SELECT name || ' <' || email || '>' AS name_and_email FROM ... /* db name and other clauses here */
