What are some good portfolio projects?

I have been at this for almost a year now. I am stuck in tutorial... Heck... I have been able to learn a lot though. I currently know Html, CSS, JavaScript, React, Node, express, and some Java. I am looking for a project that will focus on the full stack. I also have some experance with Sequelize. So I can also build a data base with this. I am wanting a project that will blow away hopefully future employers.

I am not strong in the design aspects but I will try my best. Currently I have a site (https://paulmessmer.com/) but I am probably going to redesign it or at least showcase better projects. There is no wrong answers so please send reply with any project that comes to mind. Thank you very much!
